Do you ever get those days where you want to be all domestic goddess fabulous and knock something out super quick but make it look like you've been slaving over the cooker for hours? 

Of course you do.
Something a little bit different from me today but I've been baking lots recently as we've been having some charity events in work.

So this is my tried and tested fool-proof muffin recipe. 

The best bit?  You can add whatever goodies you like.  My favourite is blueberry but my other half is all about the chocolate chips.

Anyway, let's get on with it.

Heat your oven to 200* and prepare a 12 hole muffin pan with cupcake cases.  I prefer to use silicone cases as they look nicer but paper cases will work grand.

What you'll need:

The dry stuff:
250g plain flour
100g caster sugar            
3 teaspoons baking powder
1/2 teaspoon salt

The wet stuff:            
175ml milk
75ml vegetable oil
1 egg

The good stuff:                
Choose anything you like:
125g chocolate chips
100g Blueberries
60g White chocolate / 60g Raspberries

Extras:          
1 tablespoon caster sugar
1 tablespoon dark brown soft sugar

Mix together all the dry stuff in one bowl
In a separate (larger) bowl - mix together the wet stuff
Then I sieve the dry ingredients into the larger (wet) bowl
Followed by whatever yummy stuff you wish to add in. 

Fold all the ingredients together but do not over mix.  The mixture will look lumpy but that's ok, muffins are lumpy.

It should only take you a moment to mix all those together and then you're ready to pop them into the cases.

I find with this mixture there is no need to ration the amount you put into your cases.  be generous, you should have enough mixture to fill all 12 cases to within a few mm of the top.

Once in the cases mix together the brown sugar and caster sugar and sprinkle this over the top of the cases - this gives the cracked textured ontop of the muffins, if you leave out this step the muffins will come out all smooth on top and look a little odd.

Pop these babies into the oven for 14-16 minutes and wait for your home to smell delicious.

  3. I love this recipe, I'm all for easy peasy cooking. I would have to do mine with gluten free flour etc, but I think I'm gonna have to have a go at these!
